The Center for Great Plains Studies’ 48th annual conference will examine food systems in the region in relation to environments, agriculture, technologies, and societies (EATS) by following production from plant (both industrial and ecological) to table. This interdisciplinary gathering will cover many aspects of food production and culture on the Great Plains with special focus on Indigenous food sovereignty movements; the long-standing significance of the meatpacking industry and related topics of labor, immigration, and health and safety standards; and the environmental impacts of food production and consumption.
